Vegetable Fried rice is the simplest rice recipe which can be made with minimal number of vegetables.
Regularly it is made with carrots and french beans.I have added corns and capsicum too.you can add your choice of vegetables.
Ingredients:
1 cup Basmati Rice or medium/long grained rice
1 medium Onion
1/4 cup Carrot (1 medium )
1/4 cup green Beans(6-7)
1/4 cup Corn(optional)
1/4 cup Capsicum(optional)
1/2 tsp ginger finely chopped
1/2 tsp garlic finely chopped
1 tbsp Soy Sauce
1 tbsp green Chilly Sauce
1 tbsp Vinegar
1 tsp Pepper Powder
Salt to taste
Spring onion greens to garnish
Method:
1.Soak rice in enough water for 30 minutes.
2.Drain the water and cook in 4 cups of water and salt till rice is just cooked.
3.Strain water in colander and keep rice aside. Let it cool completely.
4.Meanwhile chop all the vegetables(carrot,beans,capsicum,onion).
5.Boil carrot, beans, corns separately till they are almost cooked and keep aside (this step is optional).
Since stir frying takes time, I boil these veggies with water in microwave and drain water and keep aside.
6.Heat oil in wide pan. When oil is hot add onion and saute till slight brown.
7.Add ginger, garlic and saute for 10 seconds.
8.Now add all veggies and stir fry on high flame till almost cooked. If u have boiled veggies as in step 5
then add capsicum first and stir for sometime and then add other veggies.
9.Now add soy sauce, chilly sauce, vinegar, salt and pepper and mix with veggies.
10.Now quickly add rice and gently toss rice till rice gets coated with sauce.
11.Fried rice is ready.Serve with gravy Veg Manchurian or any other gravy of your choice.
Notes:
1.Fried rice can be made with leftover rice or fresh rice.
2.Dont over cook rice. It should be just cooked. If making fresh rice, let it cool completely.
