I always wanted to bake something with cheese and here comes cheesy corn spinach. Corn and spinach is baked with cheese and white sauce and it is absolutely mouth watering, delicious dish.
Once in a while we can eat cheese :)...
Serves:5-6
Ingredients:
1 cup Corn (boiled)2 cup Spinach (chopped & boiled)
1 tsp Oil
1/2 cup Onion (finely chopped)
2 Tbsp Butter
2 Tbsp Maida
2 Cup Milk
2 tsp Black Pepper Powder
2 tsp Italian Herbs(oregano, dried basil..)(optional)
1/2 cup grated Cheese to white sauce
1/4 cup grated Cheese to sprinkle on top(vary quantity according to your choice )
Salt to taste
Method:
1.Heat oil in a pan and add onion. Sauté till it becomes brown.2.Now add boiled spinach and sauté till all water drains up.
3.Add corns and mix well on high heat. Keep this mixture aside.
Now lets make white sauce
1.Add Butter in wide pan. When butter melts add maida to it and saute till it slightly change the colour and nice aroma comes.2.Now Add the milk continuously stirring so that no lumps are formed. Keep Stirring.
3.Add Salt and pepper powder and Italian Herbs and mix well.
4.Add cheese to sauce and stir well.
6.Switch off and stir in corn and spinach mixture to this.
7.Transfer to greased Baking Dish.
8.Sprinkle cheese on top. Bake 30 minutes before serving.
Baking
1.Preheat oven at 180 degree. I keep microwave in convection mode at 180 degree for 8 minutes.2.Keep Baking Dish at 180 degree in convection mode for about 20 minutes. Cheese on top will be melted by this time.
3.If you want to brown the cheese, bake for some more minutes.
