Eggless Carrot Cake (No Maida, No Butter, No Eggs,) recipe

This is very healthy cake made from carrots, wheat flour and olive oil.(No Eggs, No Maida, No Butter).
One can eat without any guilt :).

Eggless Carrot Cake

I had loads of carrot at my home.So I wanted to do my favourite carrot halwa.But after eating so many sweets during ganesha festival
my hubby all of a sudden goes on a diet mode. He strictly said no unhealthy foods ;)..
So here goes my diet cake.I am sure it is healthy. right guys???


Eggless Carrot Cake

Ingredients:
1 cup Wheat Flour
1/2 cup Grated Carrots
1/2 cup Curd/Yogurt
1/4 cup Olive oil(you can use any vegetable oil )
1/4 cup White granulated Sugar
1/4 cup Brown sugar(you can use white sugar instead of this)
2 Tbsp Milk
1/2 tsp Vanilla Essence
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Cinnamon Powder
1/4 tsp salt
1/4 cup dry fruits(Raisins, Almonds, Walnuts)

Method:
1.Grate carrots and keep aside.
2.Take two mixing bowls. In First bowl sieve the Flour ,baking soda and Baking powder twice.Yes twice.Usually wheat flour makes cake dense. sieving twice helps to make it spongy. Using spatula/whisk mix these dry ingredients so that baking powder and baking soda mixes uniformly with flour.
3.In second bowl add curd, milk, oil and sugar(white & brown).Mix well till sugar dissolves.

4.Now add Vanilla essence and cinnamon powder, salt and mix it.
5.Now add carrots and dry fruits and mix well.
6.Now Add the ingredients from first bowl(dry ingredients) to second bowl little at a time to liquid mix and fold in gently so that no loops are formed. Don't over mix/whisk it. Gently fold in.
7.Gently whisk it to make a smooth batter.

8.Let batter sit for 10 minutes.so that carrot leaves its flavour and then transfer to cake pan.
9.Batter is ready. Time to preheat the oven. I keep Microwave in convection mode at 180 degree c and heat it for 8-10 minutes.
10.Meanwhile Grease the Cake mould with oil and then sprinkle the flour which will help to take out cake from mould easily.
11.Now put the Cake dish in preheated oven at 180 degree c for 25 min. after 25 min keep checking every 5 min until toothpick/knife inserted in the centre of cake comes out clean.

12.Cake is ready. Yipeeeee...Keep on cooling rack for sometime....
13.Now you can unmould the cake.

Notes:
1.Brown sugar gives moisture to Cake.So used this to make cake moist.you can use white sugar instead of this too. Taste wise no difference.
2.Always fill the cake batter not more than  1/2 to 3/4 of mould.Otherwise it has possibility to rise and come out of mould.
3.How to check:I filled water in Cake Mould.This loaf pan  was taking around 3 cups.This recipe batter amount is perfect for this pan.

  1. hi! nice recipe.....could you please explain again how to Approximately measure the batter and pan size compatibility. considering we have to account for the rsing of the cake too

    1. Hi anu, My loaf pan when i filled with water was taking about 3 cups that is 750 ml.
      This recipe measurement fits for that . This recipe was giving between 1.5 to 2 cups of batter. So if you have bigger pan, say which takes around 6 cups. then u can double this recipe. Hope this helps.
