This is used in many Indian Desserts/Sweets. As we know festival season has started now, i was thinking why can't i do this at home and do the desserts. Because I can do quantity how much I want and any day homemade is better than store bought. So here it goes....
I made this in 2 ways.1)Quick way using milk powder and 2) Traditional Indian way using milk.
Trust me both tastes same. :)
So here goes the recipe in both ways
Makes: 1 1/4 cup
Ingredients:
1 cup Milk Powder
1/2 cup + 2 Tbsp Water
3 Tbsp Butter
1/2 cup Sugar
Method:
1.Heat the water. When it comes to boil switch off.
2.Blend together hot water, butter and sugar in a mixer.
3.Now add 1/4th of milk powder at a time and blend each time.
4.Voila its ready :)
2)Indian way using Milk
Makes: 3/4 cup
Ingredients:
2 1/2 cup Milk
1/2 cup Sugar
1 Tbsp Butter
Method:
1.Heat the milk and sugar together in a pan in a high flame. Once it starts to boil put on medium or low flame.
2.Take care not to burn on high flame. Keep stirring in between every 30 seconds.
3.I kept in medium flame and did the process by stirring continuously. It will take 10 to 15 minutes.
4.Once it reduces to one third add butter and mix thoroughly. It will give a nice shine and thickens the mixture.
5.When it starts to thicken and frothy in texture switch off the flame. It will thicken more after cooling. So Don't over thicken it.
6.Allow it to cool completely.
7.Once cooled, use immediately or store in airtight container in refrigerator.
Note:
1.If it becomes more thick , not to worry, just add little milk to it and warm it or add hot water.
