

Ingredients:
1 cup Maida /All Purpose Flour
1.5 Tbsp Curd
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1 tsp Sugar
Salt to taste
1 tsp Oil/Butter
Onion Seeds or Sesame(Black or white) to sprinkle on top
Coriander Leaves (Optional)
1/4 Cup Milk or Water ( to knead dough)
Method:
1.In a bowl mix flour with baking powder and baking soda. Make sure it is evenly mixed.
2.Make a well in the center of flour mixture and add Oil, Curd, Sugar and Salt. Add Milk as required and make a smooth dough. Knead for a minute and keep covered with wet kitchen towel for 1 hour.

3.Knead again to make soft dough and divide dough into 5 equal sized balls.
4.Dust the rolling surface with flour and roll it to make thin kulcha. If its shrinking while rolling add little oil to rolling surface. It will help to roll it easily.

5.When it is almost done, Take out the kulcha from rolling surface and sprinkle some sesame or onion seeds and coriander leaves on the rolling surface,put back the kulcha on it and roll the kulcha slowly. Seeds will easily stick to the kulcha.
6.Heat the tawa and when tawa is hot, brush the water to plain side of kulcha and put the kulcha on tawa so that plain part where water is applied will touch the tawa.
7.When you see Bubbles on the top , turn to the other side and cook till you see brown spots.

8.You can even directly cook in the flame when you turn to other side(above step).
9.Brush some butter or enjoy plain kulcha with Chana Masala or any side dish of your choice.

Great recipe. It reminds me of my favorite authentic kulcha from Kulcha King. I also love their biryani and kebab. I always get their menu thru their online-ordering promo and discount.
