Amla(Indian Gooseberry) is rich in vitamin C and very good for health. I have never done anything using amla but mom used to prepare this instant pickle and dry candies.We as kids always loved these candies and pickles.Hope to make candies soon :).
I had got amla 2 days back and mom is here :). So with the help of mom I did this instant pickle. It is very tasty and goes well with curd rice and parathas. Hope you all like it too.
10 number Amla (Indian Gooseberries)
1/2 cup Water
1 Tbsp Oil
1/2 tsp Mustard seeds
1/4 tsp Fenugreek seeds
2 tsp Chilli Powder(you can vary according to your spice level)
1/4 tsp Turmeric Powder
Jaggery or Sugar as per taste(optional)
pinch of Asafoetida(hing)
Salt to taste
Method:
1.Boil the water with salt and add amla in it for 5 to 8 minutes or till soft. you can steam it too.
2.Strain the water and allow it to cool completely.PAt with kicthen napkins to dry.Once cooled and dried cut them into wedges by discarding the seed.Keep aside.
3.Dry roast the Fenugreek seeds and make a powder of it.Keep aside.
4.Heat oil in a pan and add mustard seeds to it. When it spluters add fenugreek seeds powder,pinch of asafoetida to it.
5.Add amla and chilli powder,turmeric and salt(remember we have used salt while boiling amla. so add accordingly).Mix well and cook for 5 minutes.
6.Add jaggery or sugar to give it slight sweet taste.This is optional step.When it melts switch off the flame.
7.Let it cool down and store in air tight container and store in refrigerator for longer shelf life.
