Its been many days I have not prepared egg curry and I see Fridge is loaded with eggs. So I thought to make this very easy and yummy egg masala. I have tried this many times and every time I love it. This goes very well with rice as well as rotis.
I want to use all eggs in the fridge before I go home. Yes!!! I am going home :). I am super excited to run home to attend my brother's wedding. Before I start daydreaming about home lets relish this delicious egg curry :)
Ingredients:
3 boiled Eggs
1/2 - 3/4 cup Tomato puree(3 medium )
3/4 cup Onion (2 medium)
1/2 tsp Cumin seeds
2 tsp Ginger Garlic paste
3/4 tsp Red chilly powder (You can vary according to your spice level)
1/4 tsp Turmeric powder
1 tsp Coriander powder
1 tsp Garam Masala
10 Cashew Nuts
1/2 cup Water for Gravy (or as required)
1 tsp Oil
Salt to taste
Coriander leaves to garnish
Method:
1.Boil the eggs in salted water. When water comes to boil keep for 3 to 4 minutes and then switch off and keep for 10 minutes covered. Then drain the water and rinse with cold water .Once cooled peel the shell and make a small slits (not cut into half) in eggs for masala to go in later . Keep aside.
2.Soak the cashew nuts in warm water for 10 min and grind to a paste using soaked water.Keep aside.
3.Make a Tomato puree and keep aside (I discarded seeds).
4.Heat the oil in pan.Add cumin seeds.once it splutters add onion and ginger garlic paste. Saute till onions turn brown.
5.Add turmeric,red chilly and coriander powder and saute for 10 seconds.
6.Add tomato puree,salt and cook until masala leaves the sides of pan and starts becoming thick.
7.Now add cashew nut paste and garam masala and water (around 1/2 cup) and cook covered till it reaches almost to a consistency required.
8.Now gently add and mix the eggs to the gravy and when it comes to boil, put it on low flame and cook covered for 6-8 minutes.
9.Garnish with coriander leaves and green chillies:)
10.Enjoy with rice or roti/chapati..
