This Soft flat bread is made from Rice Flour.This is a very popular dish of Coastal Karnataka. This is served with chicken curry or any meat curry.This goes very well even with Egg Kurma and some vegetable curry. This is even served with Red Coconut Chutney specially for breakfast.

We call it as Hanchi Rotti in our local Kannada language. This is also referred as Akki Rotti, Akki roti.Recently got to know, in Kerala it is called as ari pathiri.
In Native, We celebrate a unique festival called 'Bandi Habba' during the month of May.This is one special occasion where we all cousins meet.During one day of this festival, We invite all family and friends for feast dinner.Speciality of dinner is This Akki Rotti and Chicken Curry.Even on regular days mom always makes these with chicken curry.Mouth watering combination.

When I started cooking , I thought to make it and initially I tried doing with cold water as we do with normal wheat flour Roti/Chapati. It was really hard to roll it .Then got to know from mom that, we should work with hot water for this. Then asked proper steps from mom and finally I could make it. I wanted to post this from long time,but always ended up eating rather than clicking :). This time made sure to click it.

Gluten Free Soft flat bread made from Rice Flour
Yields: 14 -15 Rotis

Ingredients:
1.5 Cup Rice Flour
1.5 Cup Water
Salt to taste

Directions:
1.In a heavy bottom pan, heat the water with salt. When it comes to boil lower the flame.
2.Now add the Rice Flour little by little and keep stirring so that it will get mixed evenly. Take care not to burn it.
3.Keep it for 10-15 seconds on low flame and switch off.
4.At this point it will be very hot to knead using hands. Using laddle just mix it and allow to become warm(not cold) for 3 - 4 minutes.
5.Wet your hands in cold water and starts kneading the dough well with your hands for about 5 to 6 minutes.
6.Repeat the same till it comes together and becomes soft and evenly smooth dough.

7.Make lemon sized balls and flatten it gently between palms and keep covered with cloth so that it will not dry out.
8.Dust the working surface with rice flour and take one ball and dust it with rice flour and roll gently to make thin,round roti.
9.Rotate in between while rolling. If it is sticking sprinkle some flour while rolling.
10.Heat the non stick/cast iron tawa . When it becomes hot,keep it on medium flame and place the rolled roti.
11.When it starts bubbling,after 5 seconds flip to other side.
12.Press the edges with backside of spoon,so that it will pluff nicely.

13.After 5 seconds take it out from tawa and keep in a wide plate.Do not stack them when hot.
14.Wipe the tawa with dry cloth to remove the flour if any,before putting next roti.
15.Once rotis are cooled a bit, Wrap the rotis in Muslin/Cotton cloth and keep in hot casserole/container.This will keep rotis hot and softer.
16.Enjoy this with any non vegetarian curry.Tastes delcious with chicken/Mutton Curry.

Notes:
1.Do not add any water while kneading.
2.Kneading hot/warm dough will give you softer rotis.
