This is the basic Eggless moist chocolate cake. This is very easy to make and can be used as a base for many cakes.This can be eaten plain as well as with variety of icings.

I usually make this with wheat flour and have plain cake without any icings. Wheat flour cakes will be a little denser than all purpose flour cake.
But the taste will be same and less guilt while gulping :)

I use this to make an Eggless version of black forest cake and recently baked for making yummy mango mousse cake.

Eggless Moist Chocolate Cake
Yields: 7.5x2 inch Round Cake

Ingredients:
1 Cup Wheat Flour / All Purpose Flour
3 Tbsp Cocoa Powder
1/2 tsp Baking Soda
Pinch of Salt
1 tsp Instant Coffee Powder
3/4 Cup Warm Water
3/4 Cup Granulated Sugar
1/4 Cup Vegetable Oil
1/2 tsp Vanilla Extract
1 Tbsp Lime Juice

Directions:
1.Mix the Coffee Powder to warm water and keep aside.
2.In a bowl sieve the Flour,Cocoa powder,Baking Soda,Salt.Keep aside.
3.In a separate bowl take the sugar and add coffee mixture to it and mix well so that sugar is dissolved.
4.Preheat the oven at 180 degree. I heat the microwave in convection mode for 8 minutes.
5.Grease the cake pan with oil and sprinkle flour or line with parchment paper and keep the pan ready.
6.Add Oil,Vanilla Extract and Lime Juice to Sugar coffee mixture (step 3) and stir well so that everything is mixed well.
7.Now slowly fold in dry ingredients little at a time from step 2 to it . Do not over mix.Fold in only one direction.
8.Once all the Flour is folded, put the batter into greased cake pan.
9.Keep the cake pan in preheated oven and bake at 180 degree for 25 minutes.(convection mode)
10.Keep checking after 25 minutes. Bake till toothpick inserted at centre of cake comes clean.
11.Cake is ready.Let it cool down.

Note:
1. If you are using wheat flour, sieve it 2 to 3 times. Otherwise Cake will be more dense
