Raita is condiment made with Yogurt and Indian Spices. You can add Vegetable or Fruits of your choice to it.This is very easy to make and will be ready in 10 minutes.You can pair it up with spicy Pulao,Biryani,Paratha's.Raitas gives cooling effect to meal platter.
Today I made raita using beetroot.I am in love with the colour. It is so beautiful and so inviting.I paired up with Methi/Fenugreek Paratha.

Beetroot Raita
Serves: 5
Ingredients:
1 Beetroot (1 Cup grated after cooking)
2 Cup Yogurt/Curd
1 Green Chilly(finely chopped)
1 tsp Roasted Cumin Powder
1/4 tsp Rock Salt/Black Salt
Mint Leaves for garnishing
Directions:
Notes:
1.You can use even raw beetroot.
2.Instead of green chilly you can use 1/2 tsp Red Chilly Powder
3.If you don't have Black Salt, use regular salt.
4.Colour will become intense as you keep it for sometime.

Beetroot Raita
Serves: 5
Ingredients:
1 Beetroot (1 Cup grated after cooking)
2 Cup Yogurt/Curd
1 Green Chilly(finely chopped)
1 tsp Roasted Cumin Powder
1/4 tsp Rock Salt/Black Salt
Mint Leaves for garnishing

1.Boil the beetroot in enough water, till it gets almost cooked. Don't cook too much.
2.Peel the skin of beetroot and grate it and keep aside.
3.In a bowl whisk the yogurt/curd to smooth consistency.
4.Add green Chilly,Cumin Powder,Black Salt to Yogurt/Curd and mix well.
5.Finally add grated beetroot and mix well.
6.Garnish with Mint Leaves and serve with spicy pulao,biryani or parathas.
