Hello everyone, I am back from a long unintended break. Yes, it was a long break, but I am very happy to say that I am blessed with baby girl.Pregnancy kept me away from cooking.Those morning sickness which will be there whole day, long journey to work , everything kept me tired those months.At the end blessed with beautiful angel. We have named her as "Iha" :).
Currently I am enjoying at mum place with my lil girl who turned 3 months. My mum always complained that I did not cook anything for her ;)..So I thought today to cook some easy dessert for everyone.So here comes the carrot halwa. All are happy now ;).


Carrot Halwa Recipe | How To Make Gajar Ka Halwa

Carrot Halwa is popular Indian dessert made from mainly carrot and milk. This recipe is a traditional one where we use only milk along with carrots. To fasten up we can add condensed milk too. But I have not added any of those. I like the taste of  traditional way :). There is no rocket science in cooking this. very simple n easy.

Carrot halwa is loved by everyone. It is most loved dessert during Indian weddings, festivals and all special occassion. You can top up with ice cream and eat it.I love the carrot halwa with plain vanilla ice cream. Trust me it tastes heaven .

Carrot Halwa/Gajar Ka Halwa
Serves: 3

Ingredients:
2 Cup Grated Carrot
2 Cup Milk
3/4 to 1 Cup Sugar
2 Tbsp Ghee
1/4 tsp Cardomom Powder
3 Tbsp Dry Fruits(thinly Chopped alomnds,Cashews and Raisins)
Cashews,Almonds and Raisins to garnish

Directions:

1.Grate the Carrots after Rinsing and Peeling.
2.Heat Ghee in heavy bottomed pan,roast the dry fruits used for garnish. keep aside.
3.Add Carrot to same pan and roast for 15 seconds.
4.Add milk and bring it to boil. Then simmer it and allow carrot to cook.
5.Keep Stirring in between so that milk wont get burnt.
6.Once the milk almost evaporates , add cardamom powder and sugar.
7.Keep stirring till the sugar dissolves and mixture starts leaving the Pan.
8.Add the dry fruits and mix well and switch off once the mixture thickens and comes together.
9.Garnish with roasted dryfruits(from step 2).Serve warm or cold.


Notes:
1.Vary sugar according to ur sweet tooth.This recipe on sweeter side.
2.As the quantity increases, cooking time increases.(milk reduction takes time )
