Today I am bringing you Healthy and tasty idli / steamed cake made using rice, coconut and dill leaves.
Being South Indian, dosa ,idlis are very common breakfast at home from childhood.Always I loved all kind of dosas and idlis.But when it came to vegetables we were a fussy eater specially greens. Dill leaves idli is one of the smartest way to eat greens.Mom always made this idli and I always loved to have this with ghee.
My sister never liked idlis. Its quite a long time she dint eat any kind of idlis. This time when she visited us, me and mom forced her to eat this idli. Surprisingly she loved it a lot and that makes my day :).
Flavour of dill leaves makes this idlis amazing and Dill Leaves has many health benefits such as boosts digestion, relief from insomnia and so on. You can find more here

Dill Leaves / Sabbasige Soppu Idli
Yields: 16-18 Idlis
Ingredients:
1 Cup Rice
1 Cup Dill Leaves / Sabbasige Soppu (packed)
1 Cup Grated Coconut
1/2 Cup Powdered Jaggery
1 Cardamom
Pinch of Baking Soda
Salt to taste
Directions:
1.Wash and soak the rice for 4 to 6 hours.
2.In a Mixer Grinder, grind the rice coarsely by adding little water and transfer to mixing bowl.
3.In the same mixer grinder,put Grated Coconut,chopped Dill Leaves,Powdered Jaggery and Cardamom and make a paste using little water.
4.Add this paste to rice in a mixing bowl and and mix well.Add water if required to make batter.
5.Batter should neither be very thick nor thin. It will be of medium pouring consistency that coats the back of spoon.
6.Add salt to taste and pinch of baking soda to above batter and gently mix it.keep aside for 2 hours.
7.Add little water to Idli Maker and allow to boil.
8.Grease the idli mould and pour the batter to moulds and place the moulds in Idli maker.
9.Let it steam for 12 to 15 min. Check the idlis with tooth pick. if its coming clean , then it is done.
10.Switch off and allow to cool for 5-6 minutes.
11.Take out idlis and enjoy hot steaming idlis with dollop of ghee or butter.
Notes:
1.Dip the knife in hot water and scoop out idlis from moulds.It will come out clean.
