Coastal cuisine usually uses coconut liberally in various forms. But this special cuisine from coastal doesnot use coconut.Roasting the chicken in ghee along with ground Indian spices makes this delicious dish.

This Dish has originated from coastal city named Kundapur(near Mangalore), Karnataka. This dish is very popular among all coastal cities.This is very easy to make. Ghee is star ingredient of the dish. You must have already guessed that by the name of dish.It is very quick to prepare too.

Kundapur Chicken Ghee Roast - Chicken cooked with freshly ground Indian Spices in ghee
Serves: 3

Ingredients:
Marination:
500 Gms Chicken (Big Chunks)
1/4 Cup Yogurt/Thick Curd
1/2 tsp Turmeric Powder
1/2 Tbsp Lemon Juice
Salt to taste

Roast and Grind:
1/2 Tbsp Ghee ( for roasting spices)
5 Dry Red Chillies
1 Tbsp Coriander Seeds
1/2 tsp Cumin Seeds (Zeera)
1/4 tsp Fenugreek Seeds (Methi)
8-10 Black Pepper
5-6 Cloves
4-5 Garlic Cloves
1 Tbsp Tamarind

3 Tbsp Ghee
1 tsp Jaggery
7-8 Curry Leaves

Directions:
Lets Marinate Chicken
1.In a bowl whisk together Yogurt,Turmeric Powder, Lemon Juice and Salt.
2.Rub the Chicken pieces with above marinate so that Chicken is well coated.
3.Refrigerate for minimum 2-3 hours or overnight.

Lets Make Masala
1.Heat the wide pan, dry roast the Red Chillies at low flame till aroma comes for about 2 minutes. Transfer it to a mixer jar.
2.In the same pan add 1/2 Tbsp ghee and roast Coriander Seeds,Cumin Seeds (Zeera),Fenugreek Seeds (Methi),Black Pepper,Cloves at low flame for about 1 minute. Transfer it to jar. Let it cool down.
3.Now add Garlic Cloves and Tamarind Juice to same mixer jar and make a fine thick Paste using little water.

Lets finally make ghee roast :)
1.Heat 2 Tbsp ghee in thick bottom pan. Add chicken pieces to it. Roast for about 2 min on one side.
2.Flip to other side and cook till chicken gets brown spots and 50% done.
3.Transfer the chicken along with liquid(ghee+ juices left from chicken) to seperate bowl.
4.Now in the same pan heat 1 Tbsp ghee on low flame and roast the Masala with little water(approx 2 Tbsp). Keep stirring till the masala becomes brown and ghee starts leaving the masala.
Keep stirring so that masala wont get burnt. Add water if required.
5.Now add the chicken along with liquid and coat well with masala.
6.Add Jaggery and salt to taste and allow chicken to cook 100%.Switch off once liquid dries up and chicken is well coated with masala.
7.Garnish with ghee roasted curry leaves and enjoy.
8.Serve with neer dosa or akki rotti or hot steaming rice.
