Beetroot Poriyal is a healthy and delicious beetroot stir fry with fresh coconut.
Poriyal / Dry Palya /Stir Fry is nothing but sauted veggies with spices and grated coconut.
This is very easy dish to make as side dish when you have rice with simple dal ya rasam. It goes well with chapati too.

During weekdays We get busy with office work and after office,I get tired and lazy to cook. Usually we have simple meal on weekdays.
Poriyals / Stir fry is one easy dish which you can make on your tired, lazy days and you can make with many vegetables. As it pairs up very well with chapati and even simple dal rice, it is easy go dish with anything you have.

Even thogh now I am on my ML, full time at home, I am super busy with my daughter Iha :)..I dont even come to know when the day starts and when it ends..She is already 5 Months. I can't beleive that..Time is just flying with her.

So these Stir fry saves me not only on weekdays, even on busy weekends :)..Whenver Sujay comes from office and playing with Iha,I try to do small small preparation like grating/chopping vegetables, grating coconut on previous night and refrigerate and quickly cook next morning so that I can have it for my lunch, as well I can pack it for sujay lunch box :).

Even thogh we eat fish in most of the meals, I try to include vegetables as much as possible. From last one month we are eating only Veg food , since it is Shravan Month and we don't eat non veg during this month :). Many Veggies are lying in fridge from some days, Before Shravan ends I want to make something out of it. So bringing here Beetroot poriyal.

Beetroot Poriyal is a healthy and delicious beetroot stir fry with fresh coconut.
Serves: 2-3

Ingredients:
2 Cup grated Beetroot (1 Big size)
1 medium Onion finely chopped
1/2 tsp Turmeric Powder
1/2 Cup fresh Grated Coconut
1/4 Cup Water [optional]
Salt to taste

2 tsp Oil
1 tsp Mustard Seeds
1 tsp Urad Dal
3 Red Chilli
1 Sprig Curry Leaves
a pinch of Asafoetida/Hing


Directions:
1.Peel the skin and grate the beetroot.
2.Heat the oil in a pan. When hot add mustard seeds and urad dal.Saute till mustard seed splutters and urad dal turns golden brown.
3.Now add Red Chilli,Curry Leaves and Asafoetida and saute for 30 sec.
4.Now add Onion and saute till onion browns.
5.Add beetroot,turmeric powder,salt to taste and saute for a Minute.
6.If it is dry, add water and keep till the beetroot is cooked.
7.Finally add the grated coconut and stir for 30 sec and switch off and keep covered till you serve.
8.Enjoy with dal rice, rasam rice or chapati..
