Being South Indian, Rice is a must in every meal. But during working days we have rotis for lunch and rice for dinner.Usually we end up with plain rice and some curry,and some side dish or fish fry :)..
I usually Make these special rice items on weekend lunch that too specially on Saturday since we don't have non veg on Saturdays. This protein packed fried rice is super yummy for weekend special lunch.
These days I usually end up making some simple and quick dishes whenever my baby sleeps. But taste buds need some yummy food too :).
Fried rice super easy to make and yummy too.Hence saves my energy and satisfy taste buds :).
You can also try simple veg fried rice. In this I have used sprouts and paneer along with veggies.
Give it a try and I am sure you will love this :).
Serve it with veg manchurian and enjoy.

Paneer Sprouts Fried Rice is cooked Rice tossed with Green Gram Sprouts, Paneer,veggies and sauces
Serves: 2-3
Ingredients:
1 Cup Rice
2 Cup Water
Pinch of Salt
1 tsp Oil
1/2 Cup Green Gram Sprouts
1/2 Cup Paneer Cubes
1 tsp Ghee to roast paneer
1 Tbsp Oil
1/2 Tbsp Garlic Finely Chopped
1/2 tsp Ginger finely chopped
1/4 Cup Cabbage finely chopped lengthwise
3 Tbsp Capsicum Chopped
1 tsp Soy Sauce
1 tsp Vinegar
3 Tbsp Spring Onion Greens
1 tsp Pepper Powder
Salt to taste
Directions:
1.Pressure Cook the Rice with water and salt.
2.Once Pressure is released , Spread the rice on wide plate and add oil and fluff with fork and allow it to cool down.
3.Slightly Cook the Sprouts with little water till sprouts becomes soft.Keep aside.
4.In a wide Pan Roast the Paneer Cubes with ghee, till Paneer becomes slighlty brown.Keep aside.
5.Heat oil in wide pan. When oil is hot add ginger, garlic and saute for 10 seconds.
6.Now add all veggies(Cabbage,Capsicum) and stir fry on high flame till raw smell goes.
7.Now add soy sauce,vinegar and saute for 10 seconds.
8.Now add the sprouts (from step 3) and saute all together on high flame till all moisture is gone.
9.Now add rice and salt and gently mix the rice.
10.Finally add roasted Paneer and Spring Onion Greens and gently stir and switch off.
11.Add Pepper Powder and Give a Gentle Mix.
12.Fried rice is ready.Serve with gravy Veg Manchurian or any other gravy of your choice.
Notes:
1.Fried rice can be made with leftover rice too.
2.Don't over cook rice. It should be just cooked.
