Merry Christmas to everyone. I hope you are enjoying your christmas holidays.I am sure everyone gulped cake on this festive occasion.I did too :)..Bringing today eggless version of basic vanilla sponge cake.

I have already shared basic vanilla sponge using eggs. I was looking for eggless version to bake at days when we don't eat eggs. I got this recipe and tried. It came out beautifully.

Always fold in the dry ingredients gently to the wet mixture to keep the air incorporated.
Do not cool the cake too much in the cake pan.Remove the cake from pan when outside of pan is cooled bit and let it cool on cooling rack where the air is circulated .

This is Basic eggless vanilla sponge cake which is used as base for many cakes with different icings.

Yields: 8 inch Round Cake

Ingredients:
Cake:
1.5 Cup All Purpose Flour
1 Cup Thick Curd/ Yogurt (not sour)
3/4 Cup Sugar
1/2 tsp Baking Soda
1 1/4 tsp Baking Powder
1/2 Cup Oil
1 tsp Vanilla Extract

ButterCream Icing:
1 Cup Unsalted Butter
3-4 Cup powdered Sugar
1 tsp Vanilla Extract
2 Tbsp Milk
Icing Colour [I used pomegranate sauce to colour][Click here for recipe]


Directions:
How to make Cake
1.Sieve the All Purpose Flour and keep aside.
2.Beat the sugar with curd until sugar dissolves and mixture becomes creamy.
3.Add Baking Soda and Baking Powder to it.Mix well and keep aside for 5 minutes until you see bubbles .
4.Now add Oil and Vanilla extract to this curd mixture and mix gently until the ingredients are combined.
5.Fold in Flour little by little at a time to this wet mixture.Meanwhile Preheat the microwave at convection mode at 180 degree for 8 minutes.
6.Once the flour is folded in and batter is ready , transfer the batter to greased and lined cake Pan.
7.Bake the cake in preheated oven for 30-35 minutes till the toothpick inserted in the middle comes out clean.
8.Once cake pan is cooled a bit and able to handle sides of pan, demould the cake and allow it to cool down on cooling rack.
9.Enjoy plain cake or with your choice of icing.

Lets Frost with ButterCream Icing
1.In a bowl beat the butter in medium speed until smooth.
2.Gradually add in the sugar around 3 cups and beat until sugar is combined well.
3.Now add Vanilla extract and Milk and pomegranate sauce and combine well untill smooth and creamy.
4.Finally add the remaining sugar little at a time as required until buttercream is firm and fluffy.
5.Frost cake with icing and Pour the remaining pomegranate sauce on top,decorate with chocolate and slice and enjoy.
