Many of you might be knowing this dish already but I am not sure about the name of the dish in all places. we at native call it as haladige Rotti or Bellada Rotti. Bella is nothing but Jaggery. We just love this. we make this as a snack and eat .This is made for special occasions too specially for baby shower functions :).

Traditionally it is been cooked in fire hearths with coal made of hot wood. Thick vessel with batter is placed on this and covered by thick plate and coal of hot wood is placed on top of the plate too. It is been cooked nicely by these hot coal on top and bottom and makes nice aromatic dessert with nice crust on top.

Since we don't use fire hearth these days, we make this using pressure cooker . I even tried making in microvave  as we make the cake. It turned out nicely. Do try . I am sure you will love this .

Rice Jaggery Cake is traditional Coastal Karnataka Dessert made using mainly Ground Rice,Jaggery and Coconut.

Yields: 9 * 3 inch Cake

Ingredients:

2 cup Long Grain Rice
2 Cup Coconut Milk
2 Cup Grated Jaggery
1 Tbsp Ghee
1/2 tsp Cardamom Powder
Small Piece of Ginger
Salt to taste
Water as needed
Ghee to grease the pan



Directions:
1.Wash and Soak the rice for 2-3 Hours.Grind the Rice and Ginger together with water as needed to make smooth batter.
2.In a thick pan, melt the jaggery with 2 Cup water.Strain to remove if any impurities.
3.Mix Rice batter, Coconut Milk, melted Jaggery,Salt to taste to make a thin batter. Add water as required to make a batter as thin as neer dosa batter.
4.Grease the Cake Pan or pressure cooker with Ghee and keep ready.
5.Take the batter in a thick bottomed pan.Keep on medium flame and keep stirring.
6.As the mixture becomes thick, keep on low flame with continuous stirring so that it won't get burnt.
7.Add the Cardamom Powder and mix well.
8.Finally add the ghee and mix well and switch off.
9.Transfer this to Pressure cooker or cake pan.
10.Steam it in cooker without weight on the cooker for about 15 min in low flame and switch off.
     or
     Bake it in preheated microwave in convection mode for about 15 min till the toothpick inserted at middle comes out clean.
11.Unmould after it cools down and slice and enjoy with ghee.

Note:
1.Batter should be very thin, it will be slightly thicker than milk consistency.
