Ivy Gourd is one of the easily available vegetable in the market. But no one likes this vegetable at my home so we get this very rarely. But whenever we get this, I make sure to do this stir fry with cashew nuts which makes this yummy crunchy sabji. This is very famous palya specially made during wedding at my native. we call this as godambi/cashew nut palya. I really love this.
You should try this special combination palya.I am sure everyone will love it.

This is simple stir fry made using special combination of Ivy Gourd / Thondekai and Cashew Nut.

Serves: 3

Ingredients:

12-15 Ivy gourd/Thondekai (cut lengthwise) (200 gm approx)
1/2 Cup Cashew Nuts
2 tsp Oil
1/2 tsp Mustard Seeds
10 Curry Leaves
1 tsp split Black Gram / Urad Dal
3 dry Red Chilly
Pinch of Turmeric Powder
1/4 Cup Grated Coconut
Salt to taste
3/4 Cup Water


Directions:
1.Soak the cashew nuts in warm water for 30 min till they become tender.Drain and keep aside.
2.Heat the Oil in a pan.When hot, add Mustard Seeds.
3.When Mustard Seeds splutters add Curry Leaves and Black Gram / Urad Dal and saute till it turns golden brown.
4.Add Broken Red Chilly and saute for few seconds.
5.Finally add Ivy gourd/Tondekai and Cashew Nuts,Turmeric Powder and saute till everything gets mixed well.
6.Add water,salt to taste and cook covered for 15 Minutes.
7.When Ivy gourd/Tondekai is almost cooked add Grated Coconut and mix well.
8.Once Ivy gourd/Tondekai is cooked and water dries up, switch off.
9.Serve with rice or as side dish for chapathi/roti and enjoy.
