Restaurant Style Flavourful dish made from Indian cottage cheese (paneer) and freshly ground spices.
Hello everyone, I hope you all are doing great. Its been quiet a few days I am away from this space. I was busy with many things this month. My sister has come to India for vacation and we sisters have lots to chit chat :).
Most important thing is it was my daughters first birthday. I can't even imagaine how the time flew. I was super excited for her birthday which was on 22nd of this month. So I was just busy with her birthday celebration preparations, chit chat with my lovely sis and so on.
Birthday was super fun. We enjoyed a lot...
When it comes to parties and food , Paneer is one of the star ingredient for me. I just realized I have not posted much of Paneer dishes. How could I ? :).. Paneer makes its special entry today ;).. Its one of my favourite dish. It is most famous recipe which is loved by many. Its mainly cooked in kadai and hence the name. Freshly grinding spices gives the dish special aroma and dish tastes amazing.
Its a must try party dish. Come on Lets party :)..

Serves: 3-4
Ingredients:
Roast and Powder:
1 Inch Cinnamon
2 Cardamom
4 Cloves
5 Pepper Corns
1 Tbsp Whole Coriander Seeds
3-4 Whole dry Red Chilies
250 gm Paneer Cubes (Cottage Cheese) cut into cubes
1 tsp Cumin seeds
1 Bay leaf
2 Medium Onion chopped
1 tsp Ginger garlic paste
3 Tomato finely chopped
1 Capsicum cut into cubes
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
2 tbsp Coriander leaves
2 tsp Kasuri methi (Dried fenugreek leaves)
2 Tbsp Ghee
1 Cup water
Salt to taste

Serves: 3-4
Ingredients:
Roast and Powder:
1 Inch Cinnamon
2 Cardamom
4 Cloves

1 Tbsp Whole Coriander Seeds
3-4 Whole dry Red Chilies
250 gm Paneer Cubes (Cottage Cheese) cut into cubes
1 tsp Cumin seeds
1 Bay leaf
2 Medium Onion chopped
1 tsp Ginger garlic paste
3 Tomato finely chopped
1 Capsicum cut into cubes
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
2 tbsp Coriander leaves
2 tsp Kasuri methi (Dried fenugreek leaves)
2 Tbsp Ghee
1 Cup water
Salt to taste
Directions:
1.Heat the pan and add ingredients under "Roast and Powder" and dry roast for 2 mins over low flame till the aroma arises.
Let it cool. Powder it fine and keep aside.
2.Heat the ghee in wide pan.Add Cumin Seeds.Once it splutters add Bay leaf,onions, ginger garlic paste and sauté over low flame till onions turn pink.
3.Now add tomato, a pinch of salt and sauté till the tomato turns mushy.
4.Now add capsicum, red chilli powder, turmeric powder, salt, 1/4 cup water and mix well.
5.Close the pan with a lid and cook for 2-3 minutes. By now the capsicum would have softened.Don't overcook the capsicum.
6.Finally add the cubed paneer, coriander leaves, ground spice powder, mix well.
7.Add about 1/2- 3/4 cup water and let it cook covered for 5-7 minutes over low flame.
8.Switch off flame and add crushed methi leaves.Mix well and keep the pan closed with a lid till serving.
9.Garnish with coriander leaves and ginger juliennes.
