Carrot Rice is mildly sweet, slightly spiced flavoured rice.
Weekdays are really busy for me. My 16 Months daughter won't allow me to go away from her even for a minute when I am at home.I would love to spend time with my lil munchkin. So I hardly get time for cooking. So now a days my mom will cook for us :). Who would not love to eat mom cooked food ?
Whenever I find time, I quickly cook some thing for everyone. One such quick cooking is flavoured Rice. Carrot Rice is one such easy dish among flavoured rice. It is very easy, very quick and very tasty and healthy rice dish. Kids will love it too since it has thae sweetness.
This dish will make your weekdays a lil easier :).

Serves: 2
Ingredients:
1 Cup uncooked rice or 3 Cup Cooked Rice
1 Tbsp Oil
1/2 tsp Mustard Seeds
1 Bay Leaf
2 Cardamom
2 Cloves
1/2 inch Cinnamon
1 Medium Onion [thinly sliced]
1 Green Chilly chopped
6 Curry Leaves
3/4 Cup Grated Carrots
1/4 Cup Coriander Leaves
1/2 Tbsp Ghee
2 Tbsp Cashews
2 Tbsp Raisins
Salt to taste

Carrot Rice is mildly sweet, slightly spiced flavoured rice.
Serves: 2
Ingredients:
1 Cup uncooked rice or 3 Cup Cooked Rice
1 Tbsp Oil
1/2 tsp Mustard Seeds
1 Bay Leaf
2 Cardamom
2 Cloves
1/2 inch Cinnamon
1 Medium Onion [thinly sliced]
1 Green Chilly chopped
6 Curry Leaves
3/4 Cup Grated Carrots
1/4 Cup Coriander Leaves
1/2 Tbsp Ghee
2 Tbsp Cashews
2 Tbsp Raisins
Salt to taste
Directions:
1.In a pan heat the ghee,once hot add cashews and Raisins and saute till raisins plump.Keep aside.
2.To the same pan add oil, once hot add Mustard seeds,Bay Leaf,Cardamom,Cloves,Cinnamon and saute till mustard seed splutters.
3.Now add the Onion and saute till it turns golden brown.
4.Then add Green Chilly and Curry Leaves and saute for few seconds.
5.Finally add the grated carrots and saute till the raw smell goes.
6.Add salt to taste and mix well to the carrot mixture.
7.Now add the rice and mix well gently.
8.At the end add chopped Coriander Leaves, Cashews and Raisins and mix well.[Keep Little for garnishing]
9.Garnish with Coriander Leaves, Cashews and Raisins and enjoy eating.
Notes:
1.Allow the rice to cool down before adding.Once the rice is cooked ,You can spread it in wide plate to cool down.
