First of all, Hello everyone. Its been a while I have not posted anything. I was busy with 9-6 job and then spending time with little one . I was hardly getting any time for myself . Though I was cooking , I did not find time for blogging and posting .
Now world has gone upside down due to covid 19 and we are locked inside from a month. My 4 year old is keeping me quite busy along with work from home .In this situation to keep me calm, relaxed and to be normal , I am spending my time in cooking . So I thought to post it as well :). I will try to post as and when possible .

Serves: 4-5
Ingredients:
Biryani Masala Powder :
2 Cinnamon sticks (2 inches)
7 Cloves
2 Black Cardamom
6 Green Cardamom
1 tsp Black Cumin/shah jeera
2 tsp Coriander Seeds
2 Bay Leaves
5 Red Chillies
Fried Onion (Birista) :
3 medium Onion
Marination :
500 gms Chicken with bone
1/2 Cup Yogurt (thick Curd )
1 tsp Garam Masala
1 tsp Red Chilly Powder
2 Tbsp Ginger Garlic paste
Coriander Leaves (Handful chopped)
Mint Leaves (Handful chopped)
2 Tbsp Oil
1.5 tsp Salt (approx)
Rice :
2 Cup Basmati/ Long Grain Rice
12 Cup Water (approx)
3 Tbsp Salt
1 Cinnamon stick
1 Bay leaf
2 Green Cardamom
2 Cloves
1 tsp Black Cumin/shah jeera
1/2 Tbsp Oil
Layering Rice :
2 Tbsp Ghee
Coriander Leaves (Handful chopped)
Mint Leaves (Handful chopped).

Chicken Biryani where chicken is marinated with yogurt,spices and then layered with rice and slowly cooked on steam.
Serves: 4-5
Ingredients:
Biryani Masala Powder :
2 Cinnamon sticks (2 inches)
7 Cloves
2 Black Cardamom

1 tsp Black Cumin/shah jeera
2 tsp Coriander Seeds
2 Bay Leaves
5 Red Chillies
Fried Onion (Birista) :
3 medium Onion
Marination :
500 gms Chicken with bone
1/2 Cup Yogurt (thick Curd )
1 tsp Garam Masala
1 tsp Red Chilly Powder
2 Tbsp Ginger Garlic paste
Coriander Leaves (Handful chopped)
Mint Leaves (Handful chopped)
2 Tbsp Oil

2 Cup Basmati/ Long Grain Rice
12 Cup Water (approx)
3 Tbsp Salt
1 Cinnamon stick
1 Bay leaf
2 Green Cardamom
2 Cloves
1 tsp Black Cumin/shah jeera
1/2 Tbsp Oil
Layering Rice :
2 Tbsp Ghee
Coriander Leaves (Handful chopped)
Mint Leaves (Handful chopped).
Directions:
1.Grind all the ingredients under 'Biryani Masala Powder' and keep aside.
2.Thinly slice Onions and deep fry till it turns golden brown and crispy. Keep aside.
Lets Marinate Chicken
3.Coat the Chicken pieces with all the ingredients under 'Marination' and 3 Tbsp of Biryani Powder (3/4th of step 1) and half of the brown onions (step 2) .
4.Mix well and keep aside for minimum 1 hour.
5.Wash and Soak Basmati Rice for half an hour. Strain and keep aside.
6.Boil enough amount of water and add all the ingredients under 'Rice'. Water should be little salty.
7.Cook the Rice till 70% done. Switch off.
8.Take the marinated chicken in heavy bottomed Kadai. Add 1/4 Cup of water(boiled water from rice) to it.
9.Layer with 3/4th of rice on top of chicken.
10.Sprinkle Brown onions, Biryani Masala Powder, Ghee and chopped coriander and mint leaves.
11.Layer with remaining rice and repeat step 10.
12.Cover the kadai with aluminum foil and close with lid and cook on high flame for 5 Min.
13.Now heat the other heavy bottom Tawa/pan and keep the kadai on top of it and let it cook on low flame for 15 - 20 minutes.
14.While Serving mix gently and serve with some raita and enjoy.
Notes:
1.You can prepare 'Biryani Masala Powder' and 'Birista' well in advance . When you prepare birista (fried onions) in advance , just store it in freezer . It will stay good for year. Just take out and use when required.
2.Marinate the Chicken in same Pan in which you will be cooking.
3.If you do not like spices in Rice, then while Making Rice, you can keep all spices in muslin cloth and drop that into water, so that you can easily remove that muslin cloth once rice is done.
4. If you want to colour, then add yellow food colour or few strands of saffron soaked in milk after layering rice.
