I remember Mom making this often in summer when we get lots n lots of mangoes in native. We even add liquid jaggery directly after cooking mangoes. We get liquid jaggery or Sugarcane molasses easily in my native. I am not sure how to name it, instant chutney or instant pickle or something else :). We called Mango Khara, Mango Sasive. It is even called as mango chutney by some, aam ki launji by some ( in Hindi ). I never bothered much on what it is called as but we always loved from childhood till now. Even my 4-year-old loves it as it is tangy (sour), sweet n spicy. It just activates your taste buds!!!
Ignore the lots of mustard seeds that you can see on the dish. My daughter just poured on it while clicking photos :)

Sweet and Spicy Raw Mango Chutney Recipe | How to make Aam Ki Launji

It is a delicious sweet, spicy, sour chutney made from raw mango cooked with spices and sweetened with jaggery.
Serves: 2-3
Ingredients:
1.25 Cup Raw mango Pieces (200gm peeled and chopped)
1 Tbsp Oil
1/2 tsp Mustard Seeds
Pinch of Hing
1.5 tsp Red Chilly Powder
1 tsp Salt
1/2 Cup Water
1/3 Cup Jaggery (65gm)
Directions:
1.Heat oil in a Pan.
2.When the oil is hot add the mustard seeds, Hing, and fry for few seconds.
3.Now add the raw mangoes, Red Chilly Powder, and salt, and mix.
4.Add the water and cook covered until mangoes are soft.Don't make it too soft.
5.Finally add the Jaggery and cook till it melts and switch off.
Note:
1.You can vary Jaggery as per your taste. You can even use sugar instead of jaggery.

Ingredients
Half ripe mangoes, peeled & cut in half - remove seeds
Oil
Garlic
Red dry chillies
Methi
Mustard seeds
Chilli powder
Tumeric powder
Salt
Sugar
Method
▪︎Warm oil
▪︎Add spices seeds, garlic & dry chillies
▪︎Add mangoes
▪︎Add chilli powder & tumeric powder and salt
▪︎Cook on low, add a little water if required until mangoes are almost fully cooked
▪︎Add sufficient sugar. Continue cooking until mangoes are fully cooked & gravy is thick.
