For this dish, use lots of onion, lots of curry leaves and cashews along with other simple ingredients to make it yummy. This makes a very thick semi gravy dish. Goes very well with simple dal rice or with roti/chapati.

Curry leaves chicken is delicious Indian style chicken with the distinct flavor of curry leaves.
Serves : 3-4
Ingredients:
Marination:
500 Gms Chicken
1/4 Cup Yogurt/Thick Curd
1/4 tsp Turmeric Powder
Salt to taste
Roast and Powder:
1 Cup packed Curry Leaves ( 40 gm approx)
3 Tbsp Cashew Nuts ( 25 gm)
6 Red Chilly
2 tsp Coriander Seeds
1/2 Tbsp Pepper Corns
2 Tbsp Ghee
2 Onion ( Medium-Big)
Directions:
Lets Marinate Chicken
1.Coat the chicken pieces with all the ingredients under 'Marination' and keep aside for a minimum of 1 hour.
Lets Roast and Powder
2.Heat the wide pan, dry roast the Curry Leaves at low flame till curry leaves turn crisp and dry. Transfer it to a mixer jar.
3.In the same pan now dry roast all other ingredients under 'Roast and Powder' till aroma comes for about 30 seconds. Transfer it to a jar. Let it cool down.
4.Blend all the ingredients to make a powder. Keep aside.
5.Slice the onion thin and Lengthwise.
6.Now in a pan add Ghee. When it is hot add the onion and saute till it turns its color.
7.Now add the marinated chicken and cook in low flame for 5 min.
8.Finally add the Curry Leaves Powder (from step 4) and mix well and cook covered on low flame till it starts leaving the oil for about 10 min.
9.Once the chicken is cooked switch off and keep covered.
10.Serve with hot steaming rice and enjoy.
