
It is very easy to bake. You can use any vanilla sponge cake base. I used my basic eggless vanilla sponge. This makes cake soft and yummy.

Honey Cake is a Basic Sponge Cake soaked with honey Sugar syrup and topped with Jam and desiccated coconut.
Yields: 6 inch Square Cake
Ingredients:
Sponge:
Eggless Vanilla Sponge
Honey Sugar Syrup:
2 Tbsp Sugar
1/4 Cup Water
3 Tbsp Honey
Jam Mixture:
1/4 Cup Strawberry Jam
1 tsp Water
1/3 Cup Desiccated Coconut
Directions:
1. Make basic Vanilla Sponge as mentioned here.
Let's Make Honey Sugar Syrup while Cake is Baking
2. Add the sugar and water and bring it to boil for 2 minutes. Switch off.
3. When the syrup is warm add honey and mix well.
4. Once the Cake is Baked. Allow it to rest for a 5 minutes.
5. Invert the Cake when it is still warm and poke holes all over the cake.
6. Spread the honey sugar syrup all over the cake. Let it rest to soak the syrup till we make jam mixture.
Let's Make Jam Mixture.
7. Heat the Jam and water in low flame, stirring continuously.
8. Stir till the jam becomes liquid and smooth and no lumps are formed. Let the mixture become lukewarm.
9. Now spread evenly the jam mixture generously on top of the cake.
10. Top with desiccated coconut and slice it once cooled and enjoy.
