Shrikhand is a creamy, velvety, rich delicious Indian Dessert made with thick yogurt (hung curd ) and flavored with cardamom.
Serves : 4
Ingredients:
1 Cup Hung Curd / very Thick Yogurt
1/4 Cup Powdered Sugar
1/2 tsp Cardamom Powder (4-5 Cardamom)
Few Saffron Strands Soaked in 1 Tbsp Milk [Optional]
Pistachios/Almonds to garnish
Directions:
Lets make hung curd
2.5 cups of regular curd give 1 cup(approx) of hung curd/Thick yogurt.
1. Take regular Curd in a muslin cloth, tie it tightly, and hang for 4 to 5 hours. Don't keep it for a longer time. The curd will become sour. If you want to keep it overnight then put muslin cloth with curd in a sieve and keep this on top of the bowl to collect water and keep in the refrigerator.
1. Take hung curd in a bowl.
2. Add sugar, Cardamom Powder, Saffron Milk, and beat nicely with a spatula or spoon till the mixture becomes smooth in texture.
Try not to use an electric mixer/beater. Over beating spoils texture. If using an electric hand mixer take care, not to overbeat.
3. Garnish With Pistachios/Almonds.
4. Serve Chilled and enjoy...
Notes:
1.You can adjust sugar quantity according to your taste.
